Healthy buffalo chicken dip

  • 1/2 cup cottage cheese
  • 2 triangles of Laughing Cow Cheese
  • 1/2 cup buffalo sauce
  • 1/2 cup shredded mozzarella cheese
  • 1 tbsp dry ranch seasoning
  • 2 cups of diced rotisserie chicken
  • tortilla chips
  1. Preheat oven to 350 then get a glass baking dish (or something similar that can go in the oven).
  2. Put the cottage cheese, Laughing Cow cheese, and buffalo sauce in the glass dish. Use an emersion blender to blend it all down until smooth. (see the NOTE below if you do not have an emersion blender
  3. Add the mozzarella cheese, ranch seasoning, and chicken. Stir to combine. 
  4. Put the dish into the oven and bake until warm and bubbling (about 25 minutes). 
  5. Eat with tortilla chips or sliced veggies such as cucumbers, carrots, bell peppers, broccoli, etc.

NOTE: If you do not have an emersion blender, put the cottage cheese, Laughing Cow cheese, and buffalo sauce in a regular blender or food processor THEN add it to the glass bowl before continuing with step 3.
