  • 1 ½ cups broccoli florets (fresh or frozen)
  • 8 oz cream cheese (or dairy-free cream cheese), softened
  • 1 cup shredded sharp cheddar (or dairy-free shredded cheese)
  • 2 green onions, finely chopped
  • 1 tsp garlic powder
  • ½ tsp onion powder
  • ½ tsp smoked paprika (optional)
  • Salt & pepper to taste
  • 1 cup chopped nuts (pecans, almonds, or walnuts) OR crushed pretzels for coating
For decoration:
  • Thin strips of white cheese (like mozzarella string cheese) OR sour cream for football “laces”
  1. Cook the broccoli in the microwave by placing broccoli florets in a microwave-safe bowl with 2–3 tablespoons of water. Cover with a microwave-safe plate or lid and microwave on high for 2–3 minutes, until tender and bright green. Drain any water, pat dry with a clean towel, and finely chop until almost rice-like in texture.
  2. Mix the filling in a large bowl, by combining the chopped broccoli, softened cream cheese, cheddar, green onions, and seasonings. Mix until everything is evenly blended.
  3. Shape the mixture into a football by scooping it onto a piece of plastic wrap. Form into a football shape (oval with slightly pointed ends), the wrap tightly and refrigerate for at least 2 hours (or overnight) to firm up.
  4. Coat the football by rolling the chilled cheese ball in chopped nuts or crushed pretzels until fully covered.
  5. Place on a serving platter and create football “laces” across the top with cheese strips or piped sour cream.
  6. Serve with crackers, pretzels, cucumber slices, or celery sticks.
